Paneer Bhurji

Paneer Bhurji is a scrambled Indian cottage cheese preparation made by sauteeing crumbled paneer with chopped onions, tomatoes and spices.

INGREDIENTS

  • Paneer (Indian cottage cheese) – 450 grams (crumbled coarsely)
  • Oil – 2 Tablespoons
  • Ghee (clarified butter) – 2 Tablespoons
  • Cumin seeds – 1 Teaspoon
  • Ginger Paste – 1 Tablespoon
  • Garlic Paste – 2 Tablespoons
  • Onion – 2 large (finely chopped)
  • Cashewnuts – 5 Nos. (cut into small bits)
  • Green Chillies – 4 nos (chopped)
  • Tomatoes – 3 large (chopped)
  • Green peas – 100 grams
  • Green Bell Pepper – 1 No. (cut into thin strips)
  • Turmeric powder – 1/2 Teaspoon
  • Chilli Powder – 1 Tablespoon
  • Garam Masala – 1/2 Teaspoon
  • Pepper Powder – 1/2 Teaspoon (freshly ground)
  • Sugar – 1/2 Teaspoon
  • Salt – to taste
  • Chaat Masala – 1/2 Teaspoon
  • Dry Mango Powder (amchur) – 1 pinch
  • Lemon Juice – 1 Tablespoon
  • Coriander leaves (dhania) – 1 bunch

DIRECTIONS

  1. Take a bowl and crumble the paneer (Indian cottage cheese) and keep aside.
  2. Heat equal quantity of oil and ghee in a pan, over medium flame. Once the combination of oil and ghee is sufficiently hot, add the cumin seeds and fry for 20 seconds, till they crackle.
  3. Next, add the ginger paste and garlic paste, fry till the raw aroma of the ginger-garlic goes away, then add onions. When the onions become translucent, add cashew nuts and chopped green chilies. Stir Fry.
  4. Follow by adding tomatoes with a pinch of salt and cook till tomatoes become mushy yet dry.
  5. Add Green Peas and continue to stir fry. Then add capsicums and saute for one more minute.
  6. Thereafter, add all the dry spice powders – turmeric, red chili powder, garam masala powder, pepper powder. Also, add the sugar and salt. Stir well.
  7. Then, add the crumbled paneer and let it cook for 1 to 2 minutes. Cook on low flame, covered with a lid to get a moisture-filled fluffy bhurji. Don’t cook the paneer for long as it will harden.
  8. Remove from flame. Sprinkle chat masala, dry mango powder, lemon juice and chopped coriander leaves to the paneer bhurji and mix.
  9. Serve paneer bhurji hot with bread toast or rotis, parathas, naan or as a side dish.
